Abstract

The article discusses the emergence and specific character of the first cookbooks published in the 19th century and early 20th century in the Serbian language and their role in the process of establishing Serbian culinary culture. The first attempts to codify Serbian culinary culture are shown against the background of the development of cookbooks on the Balkan Peninsula in the 19th and early 20th centuries. The works of Jerotej Draganović, Katarina Popović Midžina, as well as Spasenija Pata Marković’s culinary instructions published in the Belgrade press were part of the project of modernisation and westernization of Serbian society, which had been implemented since the end of the 19th century and which also included daily diet and organization of social life.
